Atlanta Chef Tex Blair's Everything Seasoning Recipes

This fresh food seasoning will enhance all the foods you cook. Try it on eggs, seafood, beef, poultry and pork, even popcorn. Use it as a dry rub, flavor a marinade or sprinkle it on your favorite dish.

Roasted Veggie and Ricotta Pastry
Serves 4 entree portions, or 6 appetizer portions
1 Sheet of Puff Pastry
1 Tomato thinly sliced
1 Yellow Squash thinly sliced
1 Zucchini thinly sliced
1 Japanese Eggplant thinly sliced ( optional)
Ricotta Filling
1 Egg mixed with water ( Egg wash)
Oil
Salt and PepperRicotta Filling
2 Cups Ricotta
2 Eggs
¼ Cup Parmesan Cheese
1 Teaspoon Tex Blair’s Everything Seasoning
1 Teaspoon Black Pepper
1 Teaspoon Salt
1 Teaspoon Thyme
1 Teaspoon Rosemary
1 Teaspoon Parsley
1 Teaspoon BasilDirections:
Spread out puff pastry on a sheet pan and score with a fork. This will prevent dough from rising to much.
Brush with egg wash Bake 5-10 min at 375º or until is golden brown and let cool down
Roast the veggies in the oven for about 10 min with a little oil, salt and pepper
Prepare the ricotta filling mixing all the ingredients together and spread on top on the pastry
Arrange roasted veggies on the top alternating colors
Bake for 20-25 min at 350º or until the center is set
Allow to cool down to cut and serve.
TBES Easy Grilled Onion
1 each Yellow or Vidalia Onion
1 tsp Tex Blair's Everything Seasoning
1 TBsp Butter
1 TBsp Olive Oil
as needed Heavy Duty Aluminum Foil
-peel the skin of the onion leaving the root intact so the onion will stay together
-place onion root side up on cutting board
-with a sharp paring knife start at the edge of the root and cut petals through the onion
-tear a 24 inch piece of foil from the roll and fold it in half to get a 12 inch by 12 inch piece of foil
-Place the onion 'flower' in the center of the foil square
-add the Tex Blair's Everything seasoning, butter and olive oil to the center of the onion
-fold the foil around the onion to seal it tightly
-place on preheated grill and allow the onion to roast for 30 to 45 minutes.
-Can be made day before
Gameday Chicken Tenders
1 pound Chicken Tenders
1 Cup Buttermilk
1 TBsp Tex Blair's Everything Seasoning
2 Cups Seasoned Bread Crumbs
as needed Cooking Spray (such as Pam)
-One day before cooking. Combine chicken tenders, buttermilk and Tex Blair's Everything Seasoning in a container with a tight fitting lid
-Allow Chicken to marinate over night
-Preheat oven to 350 degrees
-Spray a baking dish with the cooking spray
-Place bread crumbs in a large bowl
-Dredge chicken tenders in the breadcrumbs. Do not drain the buttermilk from the chicken fingers
-Place breaded chicken tenders on the prepared baking dish and spray with cooking spray
-Bake chicken tenders in in oven for 20-25 minutes until they are cook completely
-Allow to cool and serve.
-Can be prepared and stored in fridge 2 days prior to servingTBES Pimento Cheese
1 lb Cojack Cheese, Shredded
1/2 c. Mayo
1/3 c. Fire Roasted Red Pepper, Diced
1 Tb Tex Blair's Everything Seasoning
- Combine all ingredients and mix well
- Refrigerate until ready to use
Joe's Turkey & Pimento BLT
3 slices Wheat Bread, Toasted
1 fillet Lettuce, green leaf or iceberg
3 slices Tomato, red ripe
3 slices Bacon, applewood smoked, cooked
1/2 c. TBES Pimento Cheese
3 oz Turkey, Sliced
- Place lettuce, tomato and bacon on one slice of bread
- Spread pimento cheese on top of second piece of toast
- Place turkey on top of pimento cheese then top with 3rd piece of toast
- Assemble sandwich by placing the turkey and pimento on top of the lettuce, tomato and bacon
- EnjoyTBES Oven Roasted Shrimp
1 pound Shrimp, peeled, deveined, tail off 21/25 size
1 TB Tex Blair's Everything Seasoning
1 TB Olive Oil
- Combine shrimp , seasoning and oil coating the shrimp well
- Place shrimp in a single layer on a lined sheet pan
- Roast shrimp in a pre-heated 350 degree oven for 8-10 minutes or until desired doneness
- Ready to eat out of the oven
